Where?

In the south west of France is the fairly harsh environment of the Massif Central. Dairy country but with a declining population. There are better places to farm than this cold and snowy place. Some call it deserted France. The usual factors apply - the invention of tractors, trucks, and sadly UHT milk. Notwithstanding, it is good for walking, and for some eating a traditional poor farm labourers meal of Aligot, now a delicacy that attracts (mad) French tourists for a month during the celebration of the "Transhumance". There are many French foods better than Aligot.
